Because they're influenced by earlier genres so that name helps to describe them. What else would you call post-rock or post-punk?
What would you call them? Most of those are related to the genre name contained in them so it makes sense.Like why would you not have metal in death metal or something? Death metal is an extension of metal so it makes sense to have "metal" in the genre name.

I know rock at least came from rock n' roll, which was I think a sexual innuendo since the music was initially associated with teenagers. Not sure about jazz and disco. Disco might actually come from discotheque, not sure which came first.In any case none of these names really come from nowhere. They come from descriptions of the genre generally (like heavy metal) or some other associated stuff with the genre. I guess nobody really coined any terms for these genres or said anything worth using as the name. Might be just lack of popularity and people talking about the genres that's the cause.
