Any good post-rock bands?

I've listened to a bunch of the pre-2000 ones (Cul de Sac, Disco Inferno, Godspeed, Slint, Talk Talk), but only have a handful of stuff post-2000. Not that post-rock even means anything. I'm mainly looking for something like Gastr del Sol, but I recently listened to Do Make Say Think and really enjoyed it.

Anyone knows any other albums that incorporates traditional Korean instruments? I saw an bandcamp link to an album that used some kind of Chinese instruments, which was great.

I always believed that the 'waves' referred to the point in time that a genre was particularly popular and the time closely following, not a specific style.

Grails should obviously not be in there and are my mistake. Thank you for pointing that out.
